SABOR D’ORO by Pedro Yera TRADICIÓN is the result of the tradition of generations of olive producers that is are summarized in this premium bottle with an intense flavor and a dark green color.
Inside can find the best oil of the season, the family reserve, obtained with the selection of olives on the first day of harvest in October. This makes it a very special oil both for its high chlorophyll content, hence its vivid, intense green color, and for its exceptional organoleptic properties.
SABOR D’ORO ® by Pedro Yera TRADICIÓN an olive oil of great personality, has and itch and bitterness very present in the mouth, fine and intense aroma characteristic of the Picual variety.
The palate presents a strong personality, something characteristic of the early oils from Jaén, with a velvety itching that appears progressively in the retro nasal cavity reaching a high pleasant and persistent level. The green nuances that appeared in the mouth appear again in the nose, although this time with a light touch of artichoke and green almond.

SABOR D’ORO by Pedro Yera VERDE combines the perfect balance between a high-quality land, 300-year-old olive trees, integrated production agriculture, optimal harvest time and a modern olive mill that prevents oxidation of the fruit.
This precious juice is obtained by squeezing the first green olives from October in a period of time not superior to 3 hours from the moment of harvest, being carried directly to our Mill to become a premium oil.
It is fresh and complex in the nose, expressing freshly fruity herbaceous and arugula and artichoke notes. Also, green banana, tomato and green almond are appreciated.
An excellent aroma that becomes even more extraordinary passing through the mouth, giving a spicy progressive and velvety flavour with notes of bitterness, characteristic of the green fruits. Bodied oil and good density texture characteristic of a cold extraction.

The harvesting of the olives for SABOR D'ORO Selección de Almazara is done with the same procedures and care as with our early-harvested oils. The main difference is the time of collection, which in this occasion takes place during the months of November and December.
During these months, the green olive is mixed with the one with a purple brushstroke, a symptom of a more advanced maturity.
From the beginning, a fine, fresh nose, fruity green almond and green olives are mixed with tomato stem and vegetables aromas reaching a great harmony and extraordinary complexity.
Later, a beautiful intensity and subtle bitterness is revealed, without being aggressive but present. A fresh, balanced, round mouth can be felt with flavours reminding us green almonds, green grass, artichokes, tomatoes and green apples.
